My favorite recipe with mango is mango jelly. You just need green mangoes, I mean, still not mature. You cook the mangoes in water, then take out the pulp, and mix whith the same amount of sugar than pulp. Brown sugar or white, as you prefer. Then cook both until the mix is thick, about an hour. It is a very easy recipe, but requires permanent attention to the mix until it is thick. It is delicious!
