How To Cook Mama Sita's Marinated Sabana De Res Steak

Tonight's main course we call steak crack because it's so caramelized, sweet, tasty and addicting.

Ingredients:

  • 1-2lbs of thin cut beef aka carne asada aka sabana de res
  • 1 bottle of Mama Sita's Barbecue Marinade(I found at a local Asian grocery store).

Step 1: Marinade the beef for 2 hours.


Step 2: Fire up the grill, preferably charcoal for the best flavor. Over the years I've learned you don't need a pile of bricks, you just need to raise a single layer up to your meat if you have an adjustable grate grill. 


Step 3: Grill the meat top down vents fully open approx. 2-3 mins. per side at approx. 2 inches between bricks and meat. Here I do it two slices at a time using minimal bricks. Be sure your side dishes and customers are ready since thin steak does cool fast.


Step 4: Eat the steak with a side opposite of sweet, like mashed or baked potatoes, asparagus, etc.........

Side note: To find this marinade I had to go thru many selections on a shelf of maybe 100 marinades in an Asian store locally, trying each and every one until we found this beauty. I love exploring and experimenting with different sauces and marinades and we've thrown out many that we didn't enjoy. I hope you can find this one and that your taste buds have the same experience ours do, just remember, it's all about enough heat to caramelize the cane sugar, that's the sweet spot, no pun intended.

Approx. 2 hours & 6 minutes. 2 hours marinade and if you start your grill prior to the marinade time being up, approx. 6 mins grill time. Thank you for asking and I hope you give it a try.
