Quick and easy and ready in under 30min for those that have some left over egg noodles and some meat or sausage left lying around
Ingredients (serves 1 hungry or 2 normal)
- 2 egg noodle nests
- 2 eggs
- Sausage or meat of some kind around 150g (I used Polish Kielbasa)
- Half an onion (chopped)
- 3 stalks of spring onion
- 3-5 tablespoons of light soy sauce
- 2 tablespoons of oil for cooking (EVOO or vegetable oil will do)
1 - Boil water in pot and get the noodles in for 5-6 minutes.
2 - Chop, slice and dice.
3 - Strain noodles from the boil.
4 - Bring oil to heat (Medium heat) in a wok or large pan and throw in onions.
5 - After about 3 minutes, add the meat and stir.
6 - After another 3 minutes, add noodles, spring onion, eggs and soy sauce and stir
7 - Season as desired and cook until everything thoroughly stirred and egg has coated the noodles.
8 - Serve and enjoy
Add chilli for an extra kick.
