I love cookies, and one of my favorites is oatmeal cookies, but when I read the label and saw all the ingredients they contained, I decided to make them at home, so today I share with you this recipe for oatmeal cookies, so you can cheer up to prepare them too.
Oat flakes is the way to take this complete cereal and oatmeal is one of the richest cereals in proteins, fats (good), carbohydrates and some vitamins, such as B1. It is a cereal of easy digestion that we must include in our diet, so in addition to enjoying delicious cookies, we are eating healthy.
These are basic oatmeal cookies, you can add raisins, nuts, chocolate chips, dehydrated blueberries, apple ... whatever you like.
Oatmeal Cookies
Oatmeal cookies ingredients
230 g of oat flakes
100 g of flour
150 g of brown sugar
1/2 teaspoon of chemical yeast
1 pinch of salt
2 eggs
150 ml extra virgin olive oil
1 teaspoon vanilla or hazelnut essence
How to make oatmeal cookies

In a bowl we put the oat flakes, the flour, the brown sugar, the yeast and the salt, and we mix everything. In another container we mix the eggs, the oil and the essence and incorporate it into the previous mixture. We mix everything, I have only used to mix a spatula, no mixer or blender is needed. Once everything is mixed, we form small balls that we flatten with our hands and put them on a baking tray.
We bake at 180ºC, it must be preheated, about 12 minutes or until you see that the edges are golden. We take them out and leave them on a grid. Once they cool, they will finish hardening.
