I hope you are having a wonderful day so far. Today was a relaxing day for me. I woke up slowly, had some fresh ginger, rose, chamomile, and lavender tea, did some yoga and went to Whole Foods with my boyfriend. Sometimes it's so healing for me to take a step back from the craziness of life to really breathe, ground myself and relax. However, I wanted to share with you what we made for dinner! Tonight for dinner we made vegan sushi bowls with cucumber, kale, avocado and furikake seasoning. If you haven't tried this out yet, you've got to!! It's super easy to make and fulfilling, so without further ado...let's make some vegan sushi bowls!
Ingredients:
3 cups of dry Thai Jasmine rice
1 ripe avocado
1 bunch of fresh Kale
1/2 cucumber
1/2 tablespoon Avocado oil
Furikake seasoning, to taste
Soy sauce, to taste
Instructions:
This recipe is so easy to make, I love it! First, wash 3 cups of dry Thai Jasmine rice. After washing, place rice into rice cooker and add water. Turn the rice cooker on and wait for the rice to be done!
Next, prep all of your vegetables that you will be adding into your sushi bowl. First, I diced up the cucumber into small pieces.
Then I prepped the kale. I removed the kale leaves from the stock of the kale and chopped up the leaves into desired pieces. You can either add fresh kale to your sushi bowl or in this case, I lightly cooked the kale on the stove with 1/2 tablespoon of avocado oil.
Once your rice is ready, you're ready to go! Add rice, cucumber, kale and avocado to your bowl. To finish up your bowl, add Furikake seasoning, soy sauce to taste and enjoy!
