A simple cupcake recipe with raisins that you can bake for a
mid-morning snack or tea party!
200 grams of butter at room temperature
2 cups of flour
1 tsp baking powder
1/4 tsp. salt
3 eggs
1 cup of sugar
60 ml of cognac or brandy
250 g of dark raisins
1 tsp vanilla extract
Separately mix flour, baking powder, salt. Pour dry ingredients into
the oil mixture. Gently mix the mass with a spoon until smooth.
Oil is softened but not melted (you can use margarine) whisk with
sugar until lush. Add eggs, cognac and vanilla. Add raisins.
Place the dough in a greased cake pan. Put the oven in a preheated to
180 C degrees. Bake for about an hour. Frozen cupcake sprinkled with
powdered sugar.
