Well actually it was a learning experience for me too. Some friends were nice enough to show us how it's done right.

I was in Mexico and the dad of the family said grab that pig, so I did.
He told another fella to grab it's front legs, so he did.
Then this third fella pulled out a knife and cut the pig, not once, but twice.
Then he rubbed salt in the wounds.
I was not prepared for that.
We did it again a few weeks later to another pig.
Such is life on a farm, I guess.
The killing part is never fun for me. Why the salt in the wounds? For sterilization?
I'm guessing it was to kill bacteria, but I had only been in mexico a few weeks and wouldn't have understood the answer if I had asked the question.
I bet I would eat less meat if I had to dress it out myself,...for a time.
If you want to live off grid, it is just one more skill to acquire.
