Pasta with Roasted Squash

Pasta with Roasted Squash is a lovely meal that serves 4 people.

the prep time is about 10 minutes and cooking time about 30 minutes.

The Ingredients you will need are as follows. You will need 2 large sized butternut squash which you peel and cut into chunks.
Then 1 head garlic, again unpeeled and broken up into cloves.
about 4 tablespoons of extra-virgin olive oil. 1 teaspoon of crushed chillies.
about 15grams of fresh sage. 100 grams of walnuts (p.s make sure people know that this meal contains nuts) .
You will need 500grams of fresh lasagne sheets which you will cut into strips. then to finish off you will need 50grams of Parmesan which you grate before you serve.

Now, How to cook it.

First I would heat the oven to approx 210c or if you have gas it would be on the 6 and a half mark.
Now place the squash and the garlic onto a large baking sheet (or you could use two smaller ones if you like).
ok now you have done that you can now drizzle with the oil and the crushed chillies and season well.

Pop into the oven for about 30 mins or until you see its a golden colour .

I would say for the last 5 minutes start to add the sage and the walnuts but, i would save a few whole sage leaves to garnish later, and remove the skins off from the garlic.

Ok so far so good. Now it is time to bring a large pot of salted water to the boil and cook the pasta (that you already cut into strips) and boil it for roughly 2 minutes ok.
Drain the pasta and now mix with the warm squash and any of the remaining oil.

Now it is ready to serve in some bowls with the grated parmesan plus any of those saved sage leaves .

And there you have it, a healthy meal for 4 people Enjoy !!!!
