The first time I ever tasted mole sauce was about thirteen years ago in a town called Taxco just outside of Mexico City . It is truly one of my favorite towns that I have ever been to.
At this time we were not vegan or vegetarian so when we ordered the mole dinner it was on chicken. I had never tasted anything like it. It kind of took me to another dimension.
Perhaps it is the combination of quite a few things some of which are ancho chilles, nuts, cinnamon other spices and cocao . I am sure the cocao is what takes this to another level of taste sensations. There is also a green mole which doesn't have cocao. I will try it someday.
I bought a small container of red mole at a popular convenient store. I was happy to see there was not any dairy or chicken broth in it although the instructions said to add a couple of spoons to a third cup of chicken broth.
I went to a health store that is around the town center on the way to the Mercado Central, and got some veggie broth. It is super tasty except it is a little bit over powered by oregano but it was still perfect as a broth.
I haven't been using oil much lately but I broke down and got a bottle of olive oil to saute the onion, garlic, mushrooms and tofu.
I bought firm tofu, but it wasn't firm like the firm tofu in Canada. It was great though. The mushrooms and tofu were a perfect chicken substitute.
I made a kale spinach salad with a basic vinaigrette, and topped with sunflower seeds.
There was brown rice and steamed broccoli on the side. I love my greens.
I also love my spice so I added a sprinkle of dried chili even though the mole is slightly spicy and for some people it might be too spicy.
