History
Around 4000 A.C. In Sumeria (soon to be Babylonian empire), is recorded in some tables of clays of the first mentions of this drink. Perhaps at first by pure chance, leaving a form of bread to the rain that would then ferment in the heat of the day.

."Yeast", with 2 types of "low" and "high" fermentation. The latter is the one that then results in fruity flavors.
"Grits", which are added cereals that make processing more stable. (Wheat, oats, corn, rye).
