I have always found many restaurants dont really give chicken dishes a lot of love and they can be very bland and boring. In Australia the go to dish is Chicken parmy. This you will find in almost every pub.
I felt i had to put a bit of a spin on my chicken special for the weekend and here it is
Pan fried crispy skin free range chicken, sliced in to 3 with red onion fried chopped up chorizo ( La bouqurie chorizo ), butter pre braised baby royal blue potatoes and a hand full of rocket lettuce. I topped it off with my cummin spiced sour cream and some micro herbs and alfalfa sprouts. Perfect with a nice cider. Enjoy in winter or summer.
