I've always found cauliflower a bit bland. But when you give it some love it is so delicious and works with and in everything.
This easy recipe gives the cauliflower a real kick and can be eaten warm or cold.
In a large bowl cut the cauliflower into small bite sized chunks. Now a generous tablespoon of yellow curry powder, half a tablespoon of cummin, a drizzle of honey, some veg oil, confit garlic and a pinch of mixed herbs. Finish with some seasoning and put them in the oven on a baking tray for 1 hour on 200 degrees Celsius.
These crunchy little puffs of gold will keep up to a week in your fridge and are a great healthy snack.
Below I used them in my sweet potato puff vegan salad.
