Wild Marron cocktail

I live in the Perth hills and near my home runs the canning river. It has a lot of very narrow areas with rocky pools, these areas are home to Marron. Marron are very similar to lobster. Now you can try catch these little crustaceans but it's tricky and not very legal. If the local council catch you they will incur fines ☹️

Luckily my local supplier has these also and purchasing them is legal. I recently made a Marron cocktail with these and wanted to share it with you all.

Firstly I cooked off the Marron in hot salted water. I was able to get these in fresh so I actually put them in the freezer first to put them to sleep (most humane).

I cooked them for about 15 minutes and then cooled them off in iced water.
For the sauce I mixed all my ingredients (found below) in a bowl to create the cocktail sauce.

I refrigerated the sauce for a few hours. I then cut open the Marron's tail and took all the meat out. I mixed a nice blob of my sauce to create the marriage 😄

My Marron cocktail 👨‍🍳

Ingredients:
Heinze salad cream 1 glass
1/2 cup tomato sauce
1 tablespoon tobacco
1 tablespoon red wine vinegar
1 tablespoon cognac or fortified wine (optional )
1 red onion diced
2 pickles diced
Salt and pepper to taste
