Meal Prep recipe as promised

Super simple meal prep for the next 4 days for 1 person.

I made Jalapino stuffed bbq chicken breast, Super Garlic n Herb baby potatoes, and salad.

Here is what you'll need

2 Chicken breasts flattened and seasoned with EVOO, salt, Garlic powder, and white paper.
As much pickled Jalapino peppers as you like.
Favorite bbq sauce about 1/4 cup
250-500g bag Baby potatoes
2 Heads of Garlic
Dried Thyme, Rosemary, Oregano (about a table spoon of each)
Salt
couple knobs of butter
Mixed greens
Avo
Lemon juice
Cucumber
Chilli peper flakes.

for the chicken

  1. Flatten
  2. Season
  3. Add Jalapinos
  4. Roll as though your were making a savory swiss roll.
    Fry the rolls on high heat until golden brown all over, then lower the heat and cover pan with a lid as we ensure the chicken cooks through. This whole process takes about 15 minutes maybe 20 depending on the kind of stove or heat you're using.
  5. Chicken has cooked through and looks beautifully golden brown, remove from the heat and use the bbq sauce as a basting the cover and let the meat cool.
  6. Once cool grab a knife and slice the chicken rolls at an angle forming pretty medallions.

For the Super Garlic n Herb Potatoes

  1. Boil Potatoes
  2. Once a fork can slide through, drain and set aside.
  3. Pop 2 heads of garlic in the microwave unpeeled for about 30 seconds.
  4. Easily remove cloves from peel, Careful the garlic is hot.
  5. Chop garlic into chunky bits.
  6. Fry garlic in 1 table spoon EVOO until golden brown
  7. Add potatoes, salt, and herbs, and butter and cook on medium heat turning continuously till all potatoes are covered in herbs and butter.
  8. DONE set aside

For the salad.

  1. Chop the cucumber
  2. Prepare the avo peel, cut and drench in lemon juice.
  3. Toss mixed salad greens in a bowl and add the cucumber and avo,
  4. Sprinkle peper flakes on top
  5. DONE !

Let's Plate, or put in food prep containers for the week. YASSSSSS!!!!!!

I am totally going to enjoy this week.
Note that I only do meal prep for dinner because it's the meal that takes up most of my time to prepare. Breakfast for me is usually fruit and oatmeal which I don't cook. I don't do lunch, instead snack on more fruit or what ever.
