The panelle are tasty pancakes made of chickpea flour, typical of Palermo(Sicily), where they can be bought on the street or in the takeaways. they are served in sandwiches covered with sesame seeds.
But my recipe is revisited, with soft bread, made with flour and water.

Ingredients:
500 g chickpea flour
1,5 l water
1/2 salt
pepper
parsley
peanut oil

Preparation:
Melt the chickpea flour in cold water, add salt and pepper and mix well with the whisk.
Put the pot on the stove and stir for a long time until the dough has become compact and comes off the edges of the pot.
Finely chop the parsley and add to the mixture.
Pour the mixture on baking paper, cover with another sheet of paper and roll out with a rolling pin in a very thin layer (about 3 mm).

Cut the dough into squares of about 5 cm and fry them in boiling oil until they are golden (the more the dough is thin, the more it swells in cooking and the more it becomes crisp).

Dry the panelle on the absorbent paper and salt.

Cut the sandwiches in half, stuff each with 3-4 slices of panelle, add a thin slice of Sorrento lemon and eat with taste!
