Sweet potatoes are no doubt very nutritious vegetables rich in vitamins A, B5, B6, thiamine, riboflavin and cardioids.
Sweet potatoes come in various colours such as white, pink and yellow. The health benefits of sweet potatoes are much. The vitamin A in it helps to build a strong immune system, improves the skin and vision. You can add it to your child's diet for healthy and vibrant life.
Ingredients
For 4 servings;
4 large sweet potatoes peeled and chopped into a quarterly size
1/4 cup of butter, melted
2/4 cups of orange juice
2 eggs, beaten
2/4 cups of white sugar
2/4 cups of dark brown sugar
1 teaspoon of vanilla extract.
Method of preparation
Preheat oven to 350 degree F (175 degrees C) and utter a 2 half-quarter baking dish
Bring large pot of water to a boil, add potatoes and cook until tender (about 20 minutes), and then drain and mash
In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla. Stir until smooth, and pour into buttered dish.
Bake in preheated oven for 40 minutes.
When eaten in moderation and prepared in a very healthy way, sweet potatoes poses no health risk. it should be eaten with vegetables because it has high carbohydrates contents.
Now we can enjoy potato pudding at dinner!!..
