Gluten Free and Vegetarian Fried Chicken with Mashed potatoes, corn & melted cheddar is amazing! What a great meal for winter too! This is a wonderful protein, it's so healthy for you! I love converting my family's favorite recipes into a healthy alternative for them.
This is a lovely Vegetarian Dish that tastes like Chicken! Just like a homemade KFC Bowl, LOL!! Except Vegetarian only! Gluten free also! Healthy Recipe for a wonderful Southern Foods Meal Cooked But at an Alternative Vegetarian Gluten Free Style Southern Foods Way! I can turn any favorite of yours into a Vegetarian -Gluten Free Version! That will taste great too! I love to convert someones favorite dish into this and they can enjoy it healthy but with all the taste!
These are wonderful and actually taste better than chicken!
You will need the following:
A Pack of Imitation Chicken as shown below.
Simply thaw it out and cut it, mash it into small pieces so you can form a patty like shape to it. Just add 2 eggs to it, salt, pepper and garlic powder. Pat in your cornmeal and place into frying pan with heated oil already- very hot so the cornmeal and flour mixture will be crunchy. Just like real chicken! No meat though.
Fry until golden brown on each sides just a few minutes.
Cook your potatoes, cut them up in small pieces, boil them and after 15 minutes empty water, add 3 tbs. butter, 1/4 cup milk, salt and pepper to taste and mash them up.
Next add the mashed potatoes first, then the chicken veggie patty, some cheese, corn, salt and pepper to taste and of course gravy!
This is a true Southern Meal favorite. I love it! It's so cool to make Vegetarian Dishes that actually taste just like the real thing. You do feel better after eating it though, lighter, not so heavy. It's nice to switch up sometimes and eat healthier!

You will need plenty of potatoes- peel and cut up about 3 cups full in water and boil.....after 10 minutes or so it will be done
Chop them into small pieces next......
I love potatoes!
Take the bag of imitation chicken above, thawed out and place in bowl to cut and mash it up into shreds...
Add eggs to the chicken mixture and a little gluten free flour and cornmeal equally to form a patty ....
Add about a 2 big spoon fulls of each of these seasonings....
You will need real butter for the mashed potatoes! :-)
Add salt while boiling your cut up potatoes
This is what you add to the chicken mixture- then form a patty shape and add to oil that is hot on the stove!
Fry them in hot oil!
When they are golden brown on each side, take them out, drain them and place on top of mashed potatoes, then cheese, then gravy and corn! You will love it!
I swear these taste just like real chicken but they are meatless! There are way my friends, there are ways! :-)
The impossible is not always possible. LOL! True!!
Stir your potatoes, salt and pepper, butter and milk while they are hot- they will be easy to mash, add gravy , etc.
This is the first layer! Mashed Potatoes! They have butter and milk, salt already in them and taste great!
Add the Chicken like patty and gravy, corn and cheese and you are all set! Enjoy this!
Add cheddar cheese shredded and you are all set! I love this meal it's so good!
Melt under a broiler or in your microwave! Just until the cheese melts!

Gluten free to boot! What! Lol! I had fun making this meal and you will too! Most kids approve! Mine does if I leave out the gravy, lol! :-)
