Would you like to cook a very delicious baked chicken, easy to prepare and without being all day in the kitchen? Then you are the right place.
Today we are going to prepare a baked chicken step by step, but not any chicken, we are going to prepare the best free-range chicken. A delicious baked free-range chicken marinated in orange juice and honey for twelve hours.
A twelve-hour marinate gives chicken meat softness and sweetness. If you have guests is a spectacular dish to regale them. Try it and sure they will repeat!
In our recipe we accompany the chicken with a garnish consisting of baby potatoes stuffed with creamy mashed au gratin and baby carrot dipped in honey. We hope you like them too!
Ingredients (four people)
- 1 free-range chicken
- For the marinade
- 2 oranges
- Honey
- 2 cloves of garlic, black pepper and parsley
- For the garnish
- 300 grams of baby carrots
- 500 grams of baby potatoes
- 100 grams of cream cheese
- 100 grams of parmesan cheese
- Fresh parsley
- Olive oil, black pepper and salt
Cooking Time
Around three hours (including between 1.5 and 2 hours of chicken baking).
Recipe preparation
The first step is the chicken marinate. This marinated is what makes this dish a delight. Note that marinating should be done the day before cooking, since the chicken must be at least twelve hours marinating in the fridge.
To make the marinate:
- Squeeze the juice of the two oranges.
- Fry two cloves of garlic and mix in a large bowl the ingredients of the marinate: the fried garlic, the juice of the two oranges, two tablespoons of honey, black pepper, parsley and salt. Dissolve the mixture completely (you can use a blender).
- Dip each piece of chicken in this mixture. The chicken will be incredible!
- For a better impregnation of the mixture in the chicken pieces, use a fork or a syringe. It is very important to puncture each piece of chicken so that the mixture penetrates each piece.
- Ready. Place the chicken in a bowl with lid and leave it overnight in the fridge.
The next day, once the chicken is ready, we will cook it. To do so, preheat the oven 10 minutes at 200 degrees. In a baking dish, add olive oil and place the chicken. Then, sprinkle some honey over each piece of chicken.
Distribute unpeeled baby potatoes through the base. The carrots will be added when 20 minutes of cooking are left.
Cover the base with foil and insert it into the oven at 200 degrees. The cooking time will vary between 1 hour 20 minutes and 2 hours, in case the chicken is very heavy.
Prepare the baby carrots. To do so, place the carrots in a bowl, and mix with chopped parsley and honey.
When 20 minutes are left to finish cooking the chicken, add the carrots carefully on the baking dish with the chicken and potatoes, and let the cooking continue. When 5 minutes are left to finish the cooking, remove the foil to grill the chicken.
Once the chicken is ready, we will prepare the stuffed potatoes. To do so, remove the potatoes from the oven carefully. Cut them in half and remove the inside of each potato as shown in the following image.
Make a mash by adding cream cheese, chopped parsley, black pepper, olive oil and salt.
Place some cheese on each potato, as shown in the following image.
And then, fill each potato with the mash.
Add grated parmesan cheese over the potatoes and grill in the oven for about 5 minutes. The potatoes then will look like as the following image.
Ready. Serve it with your favorite wine. And… enjoy it! Bon appétit!
