Buckwheat is very popular in Russia, we call it miracle food! Russians ate it constantly through the war, revolutions and other catastrophes. It's nutritious and it's a good source of magnesium. We boil it in a water and eat as a side dish like rice or potatoes. Buckwheat can lower risk of developing high cholesterol and high blood pressure. 1 cup of buckwheat contains the following nutrients: 34% manganese, 28% copper, 21% magnesium, 18% fiber, 17% phosphorus. Some researches has been done in the past and 36,000 women (who were suffering from diabetes) have been tested on buckwheat consumption. Those who ate buckwheat 3 times a day had a 21 percent lower risk of diabetes compared to those who ate one serving per week.
So, I cook dishes with buckwheat at least once a week and the one I offer here is optional. The simplest version of cooking it the same way you cook rice. But buckwheat and mushrooms is the best combination!
