Ingredients:
3 sweet potatoes, skinned and diced small
1 poblano pepper diced
1 jalepeno diced
1 sweet onion diced
2 teaspoons paprika
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons (roughly) coconut oil
1/4 lb. mild Italian sausage
2 over easy eggs
Tabasco to taste
Heat large pan/pot to high. Once pan is hot, place sweet potatoes in pan, add coconut oil and stir. Let sweet potatoes cook for 2 minutes then add the peppers, onions, sausage and seasoning (not tabasco yet!).
Continue to stir fry until sweet potatoes appear to brown (5-8 minutes). Add Tabasco (about a tablespoon for me, but I like it spicy!). Take 1/4 cup of water drop in pot while on high and cover with lid let sit for 5-8 minutes. In a separate pan begin heating the eggs. I recommend over easy for the doneness.
Check potato doneness with fork, if the potatoes are not done add another tablespoon of water and cover for another 2-3 minutes.
Place hash in bowl, add additional tabasco to taste and top with the over easy eggs. Enjoy!
