Hello Friends!
We all have those people on Steemit that we love checking their page every day. For me... @gringalicious is one of those people! I am constantly amazed by her creativity and the beauty of her dishes.
The other day I was drooling over her latest creation and we got into a fun conversation in the comments. She challenged me to try making one of her dishes!
This is my first time putting together a cooking video, but I couldn't resist the challenge! I am trying to eat pretty clean right now, and so I was really drawn to her Avocado Mousse recipe. I have to say, I was also a little nervous that this would end up being one of those "pinterest fail" kind of videos... but i'm actually really happy with how it turned out.
It is still not nearly as photogenic as her post... but hey, that's why she's the professional!
Here's the Original Recipe:
Mint Chocolate Chip Avocado Mousse Cups
Prep Time: 20 minutes
Total Time: 20 minutes
Yield: 3-4 servings
Whip up these quick and easy little treats that don't need cooking. They're also gluten free, dairy free, and vegan.
Ingredients
2 medium (ripe) avocados. pits removed
1/2 cup sugar in the raw
1/2 cup full-fat coconut milk
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 teaspoon pure peppermint extract
1 teaspoon lemon juice
1 1/2 tablespoons cocoa powder
Crumb Layer:
3/4 cup almond flour
2 tablespoons sugar in the raw
1 1/2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
pinch of salt
1/3 cup mini chocolate chips, or cocoa nibs
fresh mint leaves
Instructions
Avocado Mousse:
Combine all the ingredients for the avocado mousse (except cocoa powder) in a blender or food processor and pulse until smooth. Scoop about half of the mixture into a separate bowl and add the cocoa powder to the blender and pulse to combine.
For the crumb layer, mix the coconut oil, vanilla, salt, and sugar in a small bowl. Add the almond meal and stir until evenly mixed.
In small glass jars or bowls, layer the avocado mousse, chocolate avocado mousse, chocolate chips or cocoa nibs. and almond crumb mixture. Top each cup with some fresh mint leaves and store in refrigerator until ready to serve.
I made a couple minor changes in the video. One was that I eliminated the mint extract, because my boyfriend @raised2b doesn't like mint flavored desserts. (crazy right??) I figured if I was going to the effort to make dessert... I should probably make something I can share. ;)
I also used monk fruit extract instead of sugar. I recently started using this superfood fruit as a sugar substitute and i've been pretty blown away by the results. I talk all about it in the video, but here's a snapshot of the jar in case an of you are interested in learning more.

Then here is my best attempt... haha. It didn't turn out quite as pretty - but it sure tasted delicious!!
I hope this opens your eyes a bit to how much work it takes to be a successful food blogger! The fact that she puts out amazing recipes every day is so impressive! It took me a couple hours just to make this post... just to put it into perspective! She creates the recipe, makes it, plates the dish, stages a beautiful shoot and writes up the post.

Avocado mousse is a favorite of mine. Sadly, my allergic kid is also sensitive to avocado. But she likes coconut cream so I can make her a fairly healthy chocolate mousse from that.
We also avoid processed sugar for the most part, relying on palm sugar, dates, molasses and maple syrup. We've tried Stevia & Xylitol because they were recommended by Drs, but I don't care for them. How would you compare the monkfruit?
I bet a coconut milk mousse would be super good too!
I am seriously in love with this monk fruit stuff. It comes as a powder, but you can mix with water to dilute it down. You have to be careful because a little goes a long way.
It is way less processed than stevia, which is important to me. It’s actually considered a superfood and is supposed to be really good for you. I like that it has a pretty “generic sweet” flavor, so you don’t get a weird aftertaste like stevia.
It looks expensive( about 30 for an 8oz jar) but t will seriously last me for ages. I think I put a teaspoon in that entire dropper bottle and Ive been using it for a few weeks.

We actually use a remineralizing tooth powder that is BubbleGum flavored and it's got monkfruit in it! Sidenote-doesn't really taste like Bubblegum, but it is a good alternative for kids that don't like mint, so there. But the point is it doesn't seem as sickeningly sweet like Stevia, but I was curious how it was to cook with.
I am very accustomed to investing in our health. Especially with the food allergies, but even aside from them. We try to eat clean because I'd rather pay the food bill now than the medical bill later.

this looks DELICIOUS! ive never paired avacado with something sweet like chocolate, always with salt or savory things. but i have juiced it before which always produces amazingggggg results. im a big healthy smoothie maker (my magic bullet is the most used item in my kitchen hehe). absolutely love this and thanks for sharing!:)
