My adult taste buds have been craving Christmas cake. So this past Christmas, I took up the challenge to make my first Christmas fruit cake. I am so happy I did! It is so delicious.
The recipe I chose is very easy and does not require months of soaking the fruit and cake in booze.
Black figs, apricots, prunes and cherries are the star dried fruits in this cake. They are happy festive fruit after soaking in Madeira overnight on my counter. I would say this is a lovely metaphor in life. Fruit takes time to develop flavours and so must we. Slow down and enjoy life, just like the fruit soaking in the booze.
