I had a craving for some Chinese takeout but I’m trying to stay on a budget/ I don’t know if the food would have been made vegan.
This is a REALLY delicious filling meal that I thoroughly enjoyed. I hope you try it out!
Recipe
1 cup of sliced eggplant 🍆
( lay it out on a paper towel with salt for 15 minutes to get rid of some of the moisture and bitterness that it sometimes has)
Create a Simple Frying Batter 🥣
1 cup of all purpose flour
1 tablespoon of salt
2 teaspoons of cumin
2 teaspoons of paprika
1 teaspoon of black pepper
1 cup of dairy free milk
1 cup of water
Coat the eggplant in the batter and fry until golden brown then lay on paper towels to get rid of excess oil.
Create the Chinese Sauce for the eggplant 🍆 🥘
1 teaspoon of salt
1 teaspoon cornstarch
2 tablespoons of soy sauce
1/2 tablespoon of vegan oyster sauce
2 teaspoons of sugar
2 teaspoons of sesame oil
1 teaspoon of minced ginger
3 cloves of minced garlic
In a skillet or wok 🍳
Toss ginger and garlic into the sesame oil then add the rest of ingredients in whatever order you want. Add a little water if you think the sauce is too thick then add the add the fried eggplant and coat it in the sauce.
Serve it onto a bed of Jasmine Rice 🍚and top with some sliced green onion!
