I created this vegan recipe because I get cravings for a good chocolate chip cookie...but don't want the dairy and eggs in it!
It's soft and chewy!! and really yummy!
So if you are intolerance of dairy, this would be your splurge!

Vegan Chocolate Chip Cookies
Ingredients
3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan butter (brand: Earth balance)
2 tsp vanilla extract
1/4 cup almond milk
2 1/4 cup all purpose flour
1 tsp baking soda
1/2 tsp sea salt
1 1/2 cup vegan chocolate chips (Trader Joe's brand) or chopped up dark (65-75% cocoa butter) chocolate bar
Directions:
In a mixing bowl, cream together your butter, vanilla and both sugars until creamy smooth.
In another bowl, mix together with a whisk the flour, baking soda, and the salt until well blended.
Alternately add the almond milk and flour until the dough is just combine. Then fold in the chocolate chips.
Bake at 350F on parchment lined baking pan for 8-12 minutes or until the edges are golden brown. You want the center just set.
Do not over bake cookies, they last longer otherwise. Cool completely and enjoy!
