Before I was vegan, I loved these little guys. Jalapeno poppers dipped in ranch were such a tasty little snack. I got a craving for them and created these little guys again. But whole lot healthier! I used the cauliflower "cheese" they were so good! You will have to remind yourself that there's no cheese in them! It's crazy how good they are!
Vegan Jalapeno Poppers
Ingredients
1 can whole jalapenos
1 recipe cauliflower "cheese" sauce
Italian panko or regular seasoned bread crumbs
2-4 each "eggs" (Bob's egg substitute powder)
Directions:
- Cut the stems off. Then cut your jalapeno long ways. Do not cut all the way through. You just want to cut one side of the jalapeno. Then take a teaspoon and scrap the insides out of the jalapeno. (the seeds and the membrane that holds the seeds) The membrane is what causes the pepper to be hot. Without it, your jalapenos won't be spicy. But if you want it spicy, leave the membrane in tack.
- Then stuff your jalapeno with the cauliflower "cheese" or your favorite vegan cheese.
- Make your vegan egg accordingly to the package. I like to use Bob's egg re-placer. I will add a little more water to the "egg" to make it more fluid and easier to dip your jalapenos. Dip your jalapenos in your "egg".
- In another bowl, add your panko or bread crumbs and then coat your jalapenos with the crumbs. Place them in a air fryer (at 400F) or preheat your oven to 425F and place them on a greased baking sheet pan.
For the air fry bake them for 10 minutes or until golden brown. You have to turn them over every 5 minutes.
For the oven, bake them for about 10-15 minutes or until golden brown on each side.
Then grab your favorite vegan ranch dressing and dip away! So simple and delicious! Enjoy it at your next get together with your friends or family!
