When it comes to staff meals, sometimes I just make the extra effort to make something real delicious!
Recently made köttbullar aka 🇸🇪 Swedish meatballs for supper. I had on hand some leftover hummus and mixed berries sauce so I just needed to make the meatballs for this dish.
I used chicken instead of pork and beef since there are some of our staff that don't eat those proteins. I have to say I was very pleased with how the meatballs turned out eventhough it's not a traditional one.
Started with sauteeing onions and garlic then adding it into the chicken mince and mixed it with cream, breadcrumbs, and an egg to bind. Shape them into balls and then pan seared them before getting the meatballs into the oven to finish.
Super delicious meal and paired really well with the creamy hummus and of course the berries sauce.
