I originally didn’t plan to share this recipe, because let’s be honest, these pancakes are not the most photogenic thing. But if you’ve been reading my blog for a while you probably know how much I love sweet breakfast. I’m kind of bored with classic pancake recipes, so I always experiment and try new flavors, flours and recipes. I’m so in love with a banana & coconut combo and these pancakes at the moment that I just have to share this recipe with you guys!
Making these pancakes can be a little bit tricky. It’s not easy to flip them, so I would advice you to use a small amount of a batter and make smaller pancakes instead of big ones. I always use coconut oil when frying them, it adds a nice flavor.
INGREDIENTS
Serves 2
- 2 medium-sized ripe bananas
- 3 big eggs
- 1/2 cup + 2 tbsp dry shredded coconut
- 1 tbsp baking powder
DIRECTIONS
- Add all ingredients to a blender and mix until smooth.
- Warm a large pan over medium heat; add about 1 teaspoon of coconut oil and spoon in 1 tablespoon of batter for each pancake. Spread the batter out a little with the spoon and cook for about 2-3 minutes or until bottom is golden-brown. Then carefully flip the pancake and cook for about 1 minute. Repeat with remaining batter.
