Ingredients
7 Cups Plain Flour
1 sachet of dried Yeast
1/2 cup Olive Oil
1 1/2 Cups of Water
Pinch of Salt
For the Filling
400g medium-sized unpitted black Olives
2 Onions
2 Cups finely chopped fresh Coriander
Salt and freshly-ground black pepper
Method
Preheat the oven to 180°C/Gas 4.
- In a small bowl mix together the olives, onion and fresh coriander. Drizzle a little olive oil.
2.Sift the flour into a large bowl together with the salt and yeast. Make a well in the center and pour in the oil and water. Combine the flour into the oil/water and knead for 10-15 minutes until you have a smooth and fairly soft dough. Cover with cling-film and leave to rest in a warm place for 30 minutes.
3.For the filling, heat the oil in a frying pan and fry the onion until golden brown. Then empty into a large bowl and add the remaining ingredients. Stir well until combined.
4.Place the dough in a floured basin and flatten it out. Add the olive mix and fold the dough in half. Continue to fold until the filling is distributed evenly into the dough.
5.Shape into individual rolls each about the size of your palm and space out onto baking sheets so they have room to double in size. Leave in a warm place for about 45 minutes until risen then cook in the oven for 20-30 minutes or until golden brown and sound hollow when tapped on their base.
