Bean Sprouts Recipe
Material:
2 white tofu, diced, fried 1/2 ripe, drain.
50 gr bean sprouts, clean it.
Seasoning:
3 garlic cloves.
5 red onion cloves.
1/2 red tomato, sliced 2.
2 tablespoons oyster sauce.
4 tablespoons sweet soy sauce.
salt.
sugar.
pepper.
How to make
Saute white onion until fragrant, add tofu and sprouts, mix well. Add another spice. Stir well. Let stand for a while until the sprouts wither. Lift. Serve warm
Chicken Bakar Bumbu Recipe for Bali
Material :
1 chicken, cut 4 parts
2 sticks of lemongrass, bruises
3 orange leaves
2 bay leaves
1/2 teaspoon nutmeg powder
3 clove grains
100 ml of water
1 tablespoon of salt
2 teaspoons of brown sugar
1/2 teaspoon of ground pepper
3 tablespoons of oil to saute
Ground spices :
5 garlic cloves
10 shallots
10 red chili
15 cayenne fruit
3 segments of ginger
4 segments of galangal
3 kencur segments
1 teaspoon of shrimp paste, fried
18 kemir grains
Sambal Material:
3 cloves of garlic, finely sliced
5 red onion, finely sliced
10 cayenne fruit, finely sliced
1/2 teaspoon of shrimp paste
2 pieces of bruised lemongrass
1 teaspoon of salt
1 teaspoon of sugar
3 tablespoons of oil to saute
How to make :
The first step, Heat the oil that will be used for sautéing, then saute fine spices, bay leaves, lemongrass, nutmeg powder, orange leaves, and cloves until fragrant.
The second step, add chicken, pepper, salt, water, and sugar, then cook over low heat until the chicken is tender and the sauce thickens for about 20 minutes. Then lift and drain.
Step three, Bake the chicken over the coals and then spread with the seasoned sauce occasionally.
Next, make chili sauce: Heat the oil in a pan, then saute onions, cayenne pepper and garlic until fragrant. Then add shrimp paste, salt, sugar, and lemongrass. then stir until done.
Finally, serve grilled chicken with chili sauce.
"PEPES THE CASSAVA LEAVES"
The shoulder:
- 500 g of mackerel, clean it
- 1 bunch of cassava leaves, Siangi. Boil until tender
- 1 lime. Take the water
- 15 whole chili fruits intact
- 5 orange leaves
- sugar & salt
Ground spices:
- 10 red chilies
- 4 pieces red
- 3 white cloves
- 2 tomatoes
- 2 cm turmeric
- 1 cm ginger
- 2 for lemongrass
- 1 galangal segment
How to Cook:
1.) Scrub the fish with salt & lemon juice until blended. Let stand 15 minutes. Then wash it clean. Set it aside
2.) Saute fine spices until fragrant. Put orange leaves, whole cayenne pepper, salt & sugar. Mix well. Turn off the heat.
3.) Cut the pieces of cassava leaves that have been boiled.
4.) Mix the fish with spices until blended. Leave the seasoning and mix with cassava leaves.
- Wrap with leaf & pin with sticks / toothpicks then steam for 30 minutes / until cooked.
6.) Lift & Serve while warm.
