Your best bet is to grow them yourself or find someone with a backyard tree. We are fortunate to have some good farmers market, but even those have few varieties. Try to find someone with a few trees and show up with a box around harvest time. :)

Local farmers market is great, but even they miss out on some of the truly wonderful apples. I would say that the 'lady in the snow' (I think that was the name) variety is the flavour that I remember the most, so delicate.
