Slow cooked Pork Shoulder (22 hours) tacos and sandwiches.

Today some of my friends came to my place to eat a slow cooked pork shoulder. We cooked the pork for 22 hours using a
sous vide. The way it works is simple, you put whatever you are cooking inside of a big Ziplock bag, in this case some meat. We put some spices, olive oil, rosemary, garlic, paprika, salt, pepper, lemon juice, lemon zest, chili flakes, powdered garlic and powdered ginger. Then we set the temperature at 74ºC/165ºF and left it overnight for just over 22 hours. That is what I call a slow cook!

This way, the meats are cooked to perfection, you cannot get it wrong when using the sous vide. It cooks so evenly, and meats come up so juicy that you get a great result for the little effort needed. So... once the pork was done, we put it on the BBQ to smoke it for about an hour and covered it with some bbq sauce. We threw some brunches of fresh rosemary to the fire in order to get that smelly rosemary smoke. In the end the meat was so tender, juicy and delicious that we were all blown away by it.

One of my friends, Agustina, brought some homemade tortillas, to make some sort of tacos with the pulled pork. Another friend, Agustín, brought some homemade breads that were really nice too. We cooked some peppers, onions, had some mozzarella cheese, rocket leaves and mexican hot sauce... we were all set for lunch!

My brother brought an American IPA beer that is so hoppy that I wanted it to last forever. Oso Pardo is a new brewery that are brewing some excellent quality beers, all of them very hoppy. We had a growler of beer while some other friends had red wine. The weather was really nice, a bit too hot but with cold beer its all good.

Another Saturday that we all meet to share a meal, as always the food is the excuse to catch up and spend some quality time together. After eating lunch we had some espresso coffee with some homemade brownie. I think that by now it is pretty obvious that we are all about food here, at least me and my friends are!
