Homemade Turkey Enchiladas (Original Recipe)

Okay, Guys, I made this for my family tonight it's my own recipe, it's turkey enchiladas.

Homemade Turkey Enchiladas

5 pounds Turkey (ground or diced)
2 pounds shredded cheese (your choice of the kind)
32 ounces of Red Enchilada Sauce
8 ounces Salsa (Preferably Homemade)
16 count Flour tortilla shells (12-inch shells)
2 Yellow onions Diced
1 Head of lettuce Diced (Kind is up to you)
2 Big Red Tomatoes Diced
Ranch Dressing
Ranch Doritos
3 cups of Rice
16 ounces refried beans (Preferably homemade)
3 tablespoons of Chili powder
1 1/2 tablespoons of Cumin
1 teaspoon of Celery Salt
2 tablespoons of White Pepper
2 tablespoons of Franks Red Hot Seasoning
1/4 cup of Hot sauce (Kind and heat up to you)
2 1/3 cups of Homemade chili broth.

First, place the turkey in a crock pot or oven with some water and the white pepper, Franks Red Hot seasoning, Celery Salt, Hot Sauce, Cumin and Chili Powder cook on a low temperature for several hours until done and completely cooked, I prefer to cook until it falls apart. Easier to just shred with your hands. While your Turkey is cooking dice all of your vegetables start with your onions so you can immediately place them in with your Turkey to cook with it. Set the lettuce and diced tomatoes to the side, start your rice to boil in the homemade Chili broth if you don't have homemade chili broth just get water and add chili seasoning to it and cook your rice in it. It adds flavor to the rice. When the rice is done add the refried beans to it mix it well When Turkey is Done and diced mix it in with the rice and refried bean mix and add a couple of hand full's of shredded cheese and stir until completely mixed. Once that is done have a lasagna pan ready sprayed or oiled and take your tortilla shells and fill them with the mix and place them in the pan until the pan is full then pour the Red sauce and salsa mix over top of the enchilada then take the remaining shredded cheese and sprinkle it over top of everything and place in the oven until the cheese is completely melted or bubbling. Then take out of oven place on counter take the Ranch Doritos and crunch them up and spread over top of enchiladas then spread the lettuce on top of that, take the ranch dressing and squirt it around on top for flavor then spread the tomatoes around. Then EAT!!!

Ranch Doritos. Never tried using that in cooking. If I can eat a whole bag of those like it is nothing, I shouldn't be so wary to include them in my cooking, right? Preservatives smervatives. As long as it has good flavor and crunch.
