** Ingredients: ** for a bread using 4 bananas
- 4 Green banana
- 4 Egg
- 1 tablespoon a of coconut oil
- 1/2 teaspoon of baking soda
- 1/2 teaspoon baking powder
- 1/2 cup of a mixture of ground oats, flaxseed and nuts (optional)
- 1/4 teaspoon of salt.
Preparation:
Peel the plantains and cut them into small pieces so they are more liquefied. Place them in the blender together with the eggs, the baking soda, the baking powder, the coconut oil and the salt. Blend until everything is well homogenous. To pass to a bowl and with smooth movements to integrate the mixture of flours oats linseed and nuts. Place in a bread pan spread with coconut oil and bake at 180 degrees for 35 to 40 minutes. Wait for it to cool down and cut into slices ... enjoy this delicious and nutritious option to regular bread.
You can add sugar or honey, raisins if it's your taste.
You can fill slices of bread with whatever you want or make super healthy French toast, spread with butter or jam ... whatever you can think of, your creativity is the limit.
Linseed, my 'goodness', when was the last time I saw linseed mentioned in a recipe ? I looked it up, and its quite amazing ... Rich in B-6 Iron and calcium, but its magnesium content is huge, which is generally lacking in our diet. I found this article, you might be interested in:

Anyway, thanks for the brilliant recipe, I haven't tried it yet as I don't have an oven - I make pan bread, so I'll try to make a pan baked version :)
