So ,I have been insanely busy of late , but that has not stopped me from eating. And def not stopped me from eating well.
Here is my sammich of last week.
Chopping and prep, remember a sharp knife is safer than dull.
Sauteed sliced white onions and crimini mushrooms in butter with salt , pepper and thyme. Cook till onions are almost see through and mushrooms are soft. Add 1/4 cup of cream , lower heat and let reduce for a few minuets . When done remove from heat.
Top of the pic is fried salami that was supposed to be for some crunch but never used.
BBBBBBBBB BACON .... Not just one , but TWO types of bacon. You cant mess around with bacon, and never cheap out, its just not worth it. P.C. makes some really good bacon.

Worth every penny. Plus some back bacon , we are set.

We had to use some flax bread as someone forgot to get real proper man bread. In all honesty , the flax brad was not bad at all. A few layers of bacon , Havarti cheese, mushrooms and onions to melt the cheese a bit and some tomato mixed greens to top.
Almost ready.
One last piece of bread with a thin layer of mayo for the top and we are ready to go.
Did i forget to mention the fried egg we slipped in there ;)

Let me tell you , if you are a fan of mushrooms. Specifically button mushrooms, use thyme. It really wakes up the flavor of them. Any time they hit your pan , give a little pinch of thyme. And if you ever make cream of mushroom soup USE IT !
Wow does it make a difference in flavor. If i was to change anything about this sammy , I would have used a nice hearty 12 grain bread and used a good swiss cheese. The Havarti was creamy and nice , but the flavor was too mild and was more felt as texture.
