Hi guys, today I have a simple Indian style spinach and potato curry to share with you. It only takes around 30 minutes to make, so give it a go if you've got some potatoes lying around!
Ingredients
400g Spinach
400g Baby new potatoes
1 Onion
2 Garlic cloves
1 tsp Tomato purée
1 tsp Ginger
1/2 tsp Tumeric
1/2 Garam masala
Seasoning: Salt, chili flakes
Recipe
Heat oil in a pan. Fry onions, garlic, and ginger together for 3 minutes. Add the chili flakes, tumeric, and tomato purée.
Add two tablespoons water and fry for 2 minutes. Add salt and potatoes. Gradually add the spinach to the pan. You will have to do this in batches, but spinach shrinks down quite a lot so don't worry about it not fitting. This part takes about 10 minutes.
Add garam masala and cook for a further 10 minutes.
