Lemon Gnocchi with Garlic Butter
Ingredients:
- 5 russet potatoes
- 1 lemon
- 1.5 cup of flour
- 1 egg (beaten)
- 1tsp salt
The kids have been wanting to make gnocchi for a while now but these darn things take so much time and are not exactly your after work go-to dinner idea. So today I worked from home and I figured I'd get a head start on boiling the potatoes.
The potatoes have to boil in a covered pot, unpeeled, for about 30 min. After that I took them out and let them sit for about 20 min until they were cool enough to handle and then peeled the skin. By then, the gang came home and they were ready to help.
Daddy and Erika used a fancy tool to "rice" the potatoes.
Then Erika used her amazing zesting skills to zest a lemon over the riced potatoes.
She also beat an egg to mix in with the potatoes and the flour, you can't really see it in this picture but you can in the next :)
Finally we put all the ingredients in a big bowl, added a pinch of salt and mixed everything together.
Erika then poured some flour on the counter and made little balls out of the dough and started rolling them into thin strips so we could cut the little gnocchi out of them.
Mom and Dad had to help with the cutting a little bit but she did the rest.
After we cut up all the gnocchi, we boiled them in batches and Mom melted some butter and toasted some garlic in it and drizzled it over the gnocchi. Topped everything with some parmesan cheese and....
