When a friend visit my family in the city of Tianjin, Peking duck is always the first meal I would like to introduce to my guest. Peking duck is dish from Beijing. It has been a popular dish over a hundred years.
My favorite Peking duck is cooked in "Open oven style" which allows most of fat inside the duck to spill out of the duck skin and dip on the fire below.
It actually adds a special flavor to the duck.
The Peking duck is characterized by its thin, crisp skin and juicy meat.
The roasted duck is often sliced in front of the guest by the cook.
A whole duck will be sliced into 108 pieces, with meat and skin on each piece. The slicing must be completed within 8 minutes to offer the top flavor.
The meat is often served with spring onion, sliced cucumber and sweet flour sauce with chun bing (think spring pancake) rolled around the fillings.
You could also roll pickled radish and other vegetables inside.
Sometimes the duck is too delicious I would eat like this...LOL
