Want to learn a new recipe for a savory, filling and super healthy soup, ready in less than 10 minutes with nearly no prep work or clean up?!
1 Tablespoon miso (I like chickpea) mixed into 1 c hot but not boiling water. (You want it warm and nice, but you don't want to kill the probiotics in this awesome soup!)
Add vegetables that have been steadied/sautéed with water and coconut oil. (Here I have selected onion, mushrooms and celery).
Only prep as many as you need; these measurements are for one serving.
And for my taste a heaping scoop of kimchi stirred in makes it extra delicious and adds even more probiotic value! If you are feeling the need for more protein, add an eggie!

yes!! great idea and thanks for the reminder on the seaweeds - I will get right back on that - i think i ate all of ours that was in the pantry.... i love the flavor of the chickpea, and soy free!
i mix the miso paste with a small amount of water in the bowl before adding the rest of the hot water and other ingredients - this gets it mixed up well and gives the water a chance to cool down before you pour the rest in. to have a purely raw miso experience, you could consider mixing it in with hummus, or I occasionally put it on toast - say with avocado <3

I often wonder just how warm not hot the liquid needs to be to keep the probiotics alive... so the miso just sits in my fridge!!
