Prepare this rich, easy and delicious Vegetable Spaghetti Lucchetti® with grilled chicken and paprika in a creamy roasted pepper sauce, with Parmesan cheese and a touch of fresh parsley. You'll love it!
Ingredients
8 water scoops
1 package of Vegetable Spaghetti
1 tablespoon of olive oil
3 dry bay leaves
2 tablespoons of salt
2 pieces of red pepper
2 pieces of chicken breast
1 pinch of salt and pepper
1 tablespoon of paprika
1 cup of sour cream
2 butter spoons
1 tablespoon finely chopped garlic
1 piece of red pepper cut into medium cubes
1 cup of Parmesan cheese
1 pinch of finely chopped parsley
to the taste of cherry tomato to decorate
Preparation
Heat the water in a pot over high heat until it reaches a boiling point, cook the Lucchetti Vegetable Spaghetti with olive oil, bay leaves and salt until al dente.
Heat a grill over high heat and cook the peppers along with the chicken breast, season with salt, pepper and paprika to your liking. Cut the breast and reserve. Sweat the peppers, clean and reserve.
Blend the peppers with the cream. Reservation.
Heat a pan over medium heat with the butter, cook the garlic with the onion, the pepper, add the sauce, cook and season to your liking. Add the Parmesan cheese and pasta, mix until well incorporated.
Serve the pasta with pieces of chicken and fresh parsley. Garnish with cherry tomatoes.
