Okay, this is my all time Plan B. Nothing super fancy, but amazing, fulfilling and even healthy. I always have some canned chickpeas at home, and the other ingredients are also basic things in my kitchen.
And the best, you only need 1 pan & even less than 30 min to make it. You can eat it with tortillas or with cooked rice, but also yummy with baked potatoes.
Why is it good for you? Lets talk about se.. nononooo about chickpeas:
Chickpeas or on a fancy name garbanzo beans, are a great source of plant-based protein and fiber, iron, zinc, B vitamins.

-Provide you Essential Vitamins and Minerals
-Help Protect Against Heart Disease
Recipe of Vegan Chickpea curry:
Ingredients:
- 1 Onion
- 2 cloves Garlic
- 1 can Chickpea
- 1 can diced Tomatoe
- handful fresh or frozen Spinach
- curry powder
- chili flakes
- salt & pepper
- water
Cooking Method:
1.Step
Grab a pan, put some olive oil or coconut oil and heat it up.
2.Step
Cut the onion the way how you like it and put in the pan, and cook it for a while until they are soft. Add some seasoning: pinch of salt, pepper and curry. Stir it for 30 sec. and add a little water, cook it until the water is evaporated. Repeat it 2 more times (add the seasoning then water)
3.Step
Add all of the rest ingredients: chickpea, diced tomato, minced garlic, spinach and some chili flakes.
4.Step
Cover and cook it approx. 10 min.
5.Step(optional)
If it too runny, take a half cup from the stew, and mix it with a hand-mixer. Cook together one more.
6.Step
