Ingredients for the Cake of Apple and Goat Cheese Bombon:
.- Refined Sugar - 60 grams.
.- Calvados - 100 grams.
.- Gelatin - 14 grams.
.- Liquid whole milk - 50 grams.
.- Apple - 1 grams.
.- Liquid cream - 50 grams.
.- Black pepper (ground) - 1 pinch.
.- Goat cheese (curl) - 60 grams.
Ingredients for the sponge cake:
.- Sugar - 50 grams.
.- Flour - 100 grams.
.- Eggs - 60 grams.
.- Yeast (royal) - 3 grams.
.- Butter - 75 grams.
.- Yolks - 18 grams.
Mode of Procedure:
With a disheartening to obtain some tubes of apple, cut to the desired measure and empty with a spoon emptier.
Put the sugar in a pan, when it becomes caramel add the pieces of apple and let them take a little color. Add drops of calvados or any other liquor to help in cooking, a little salt, and reserve.
For the cream of cheese, crush this with the hot cream, add the milk and put it in a bottle or plastic bottle.
Heat the remaining part of calvados or any other liquor, add the unflavored gelatine and let cool.
For the cake, mix the butter and sugar, emulsify with a stick, add the yolks and clear mounted, flour and yeast. With the homogeneous dough, place in a mold and bake 180º for 40 minutes. Unmold and cut to size.
Way to Mount:
Temper the apples and fill with the gelatin of calvados.
Cover with the cream cheese and grind a little pepper at the last moment.
In front of the apple candy place the little cube of sponge cake and sprinkle some icing sugar and cinnamon.
