Hello, my fellow Steemians~
Never in your day is better with some summer rolls, especially when you're encountering the blazing hot weather in Southeast Asia. The unbeatable hot and sunny weather is making everyone to sweat it all out. Well, all thanks to the genius human's brain, chefs from the different cultural background are coming up with their own creativity to create different dishes for everyone to beat the heat.
Like in Japan, we have "Zaru Soba" which is a chilled noodle dish made out of buckwheat flour and served with Japanese "Tsuyu" dipping sauce, Korea we have "Naengmyeon" which is also a cold soup dish with noodles. These creations are created with one aim which is to cool you down. While the Vietnamese found out their solution with the creation of "Vietnamese Summer Rolls".
Then, today we are going to re-create it at home with just a little twist on it. So, let's get right into it!
Ingredients:
Servings: 2-3 pax
Dipping Sauce:
- 1 teaspoon fish sauce
- 1 teaspoon salt & sugar
- 1 minced bird's eye chili
- 2 minced garlic cloves
- 3 tablespoons of water
- Sliced red onions
- 1 lime
Wrapping Ingredients (Optional):
- 1 Packet of Vietnamese Rice Paper Wrap
- 100 grams of minced pork/beef
- 100 grams of shrimps
- 100 grams glass noodles
- 1 onion (sliced)
- 1 carrot matchstick slices
- 5-6 stalks of coriander
Method:
1.Devein the shrimps, boil water to cook the shrimps and glass noodles until they are cook thoroughly. Then set aside to let it cold.
2.Cook the minced pork with oyster sauce, soy sauce, pepper, and salt.
3.Slice onions and carrots, leave it aside for later use. Wash and rinse coriander thoroughly and make sure it's clean to use.
4.Soak rice paper in water for a few seconds for both side, let it soften and ready to wrap.
5.Assemble everything and ready to wrap!

Its funny cuz my favorite thai restaurants serve this and call it fresh roll or goi con !! Is it the same?? Or is my fave restaurant not thai?? Lol anyway its my fave soring roll n i can eat them allll dayyy
Hello Lima!! It's nice to see you here! It's called "goi con" in Vietnamese but it's not a Thai thing. I think besides Bahn Mi, these summer rolls is their next national dish in Vietnam. The fact that it's called summer rolls in english because they are not fried like spring rolls and the rice paper skin is very light. It's perfect for summer snack because they have a lot of fresh herbs in it :D Guess, it's time for you to make some at home too?

It's never hard at all, I can close my eye to do it. I love to make them at home to snack while watching my netflix. And it's gone soon so quickly before my netflix series even started hahaha
