Ingredients
2 400g cans chickpeas
2 tablespoons of extra virgin olive oil
1/2 teaspoon (or a good pinch) of salt
3 teaspoons spices or chopped fresh herbs, e.g. chili powder, curry powder, garam masala, cumin, paprika, rosemary, thyme or what ever herbs and spices you are in to.
You will also need
Strainer
Paper towels
Baking sheet or tray
Instructions
- Heat the oven to 200c :
- Rinse and drain the chickpeas in the strainer
- Pat the chickpeas very dry with a clean dishtowel or paper towels. Some of the skins may come off while drying, but otherwise don’t worry about them.
- Spread the chickpeas out in an even layer on the baking sheet. Toss the chickpeas with olive oil and salt.
- Roast the chickpeas in the oven for 20 to 30 minutes. Give them a shake up every 10 mins.
- Toss the chickpeas with the spices and serve while still warm.
