My daughter loves cupcakes and she often asks me to make some. Last week we had a go at making what I hope is a healthier version than the standard cupcake.
They are very easy to make.
ingredient:
1 cup flour
2/3 cup sugar
1tsp cinnamon
1tsp baking soda
1/2tsp baking powder
1/4tsp salt
1 1/2 cups grated carrots
2/3 cup old
2 eggs beaten
To prepare place all dry ingredient in a bowl. In a separate bowl combine carrots and oil, slowly mixing the eggs.
Add flour mixture and stir until just starts to come together. Place into a tin paper liners and fill cases making sure not to over fill.
Bake until skewer comes out clean (around 15min) at 180c.
To make icing beat 250g of cream cheese, 4 tbsp butter (room temp) and 2 cups icing sugar. Once ready pipe with a star nozzle onto cupcakes and sprinkle with some diced dry fruit.
