Good evening,
My wife and I celebrated our wedding anniversary tonight. We have been facing a bit of a financial tightening and so I decided that we would forgo our "fancy" dinner out, instead we dined in. I bought a nice beef roast, a sweet potato, and a rutabaga, picked some herbs and other stuff from my garden and got to work.
Sliced the roast into steaks, then smoked it over hickory for about an hour, then in the pressure cooker for about another hour.
So... here's what I was able to present to my beautiful wife. Thin sliced beef, with a balsamic reduction au jus, sweet potato, and baby carrots. Not too bad for a workin' man if I do say so myself!
