(Thai)Tom Yum Fried Rice

I usually cook Indonesian, but today I wanted to cook Thai food. Tom Yum fried rice. Asian food are known for using many spices in their dishes. That is why Asian food is super delicious! :-D. Thai food for example often has lemon grass in their dishes. This makes the combination of shrimps, lemon grass and coriander perfect!

Ingredients

  1. 3 cups/380 grams of pandan/jasmine rice
  2. 250 grams mushrooms
  3. 200 grams large shrimps
  4. 2 table spoon fish sauce
  5. 1 broth block
  6. 1 tea spoon shrimp paste(block)
  7. 1 tea spoon salt
  8. 1 sachet of tom yum paste
  9. 2 table spoon lime juice
  10. 35 grams of fresh chopped coriander
  11. 2 large fresh lemon leaves
  12. 4 cloves of garlic
  13. 3 pieces of galangal
  14. 1 lemon grass
  15. 5 spanish chilli peppers(rawit)

Step 1

Cook the rice with a rice cooker

Step 2

Chop the garlic cloves and chilli peppers

Step 3

Take a large pan and add 3 table spoon of sunflower oil. Add lemon grass and galangal. Cook for 10 minutes low fire.

Step 4

Add lemon leaves, chilli peppers, garlic, lime juice, fish sauce, salt, shrimp paste, broth block and tom yum paste to the pan and cook for 7 minutes.

Step 5

Now we add the shrimps and mushrooms and cook until they are soft, about 10 minutes.

Step 6

Rice is ready, so the rice goes into the pan too. Cook again another 10 minutes and then you are done!
You can now enjoy your Tom yum fried rice!

yummy!!! one tip make sure you wash any rice atleast 3 times just so that no arsenic is left behind!!!!

I always wash 1x . But maybe its indeed better to wash it 3x. Thanks for the advise

can I add soya sauce nd radish in fried rice...nd I faced prblm very time dat my rice is became so sticy.... so ny suggestion for fluffy rice

Hey @ananyasingh! You can add anything you like. You just have to try out how it tastes. Maybe a bit soy sauce would be ok. I dont use it in this dish. Only with Indonesian fried rice. Radish, why not? Never thought of eating radish :-). Just play around with ingredients. If your rice is too sticky or fluffy, try reduce the water. You probably used too much water. I always measure 1 till 1.5 cm above the rice. So when you put the rice inside the ricecooker and you have added water, the water should not be more than 1 till 1.5 cm above the rice surface. You can use your index finger to measure.hope this will help

Your family is so lucky having some one cook such such good food all the time ! I love tom yum soup so I definitely need to try this one !

Hehehe thanks. I learned cooking since i got married. I found out my husband never cooked before. Before, I was allergic to cooking. I also like the soup version a lot! Yeah, you should try it!

I am allergic to cooking at the moment but I hope to get rid of this allergy soon !
