VEGAN NUTELLA
Hello! Today I will teach you how to make a very sweet-toothed recipe that will probably remind you of your childhood. We are going to prepare a genuine vegan Nutella to be able to enjoy it above all with some warm toast.
What am I going to tell you about Nutella that you don't already know? The main thing is that it's really good and once you've put the spoon in the glass... you're lost! Behind one spoonful comes another, and another, and you say to yourself: "This is as far as we've come, it's better to take it in moderation". But spend some time and you go back to the attack, spoon in hand, to get more Nutella.
With this in mind, we will make a vegan hazelnut cream that is as healthy as possible. To replace the sugar I have used agave syrup, which if you don't know it is a syrup obtained from plants originating in Mexico. It is a good substitute for refined sugar as its glycemic index is more moderate. In this way, we can continue to enjoy the sweetness in desserts.
Why is it a good idea to make homemade vegan nutella?
As I said, the creams that we can find in supermarkets have a lot of sugar (besides the vast majority are not vegan). In addition to sugar, they also contain a lot of saturated fats that do not come from hazelnuts or cocoa... In fact, if you read the labels of these products you will see that the percentage of hazelnuts is actually very low, almost testimonial.
Unlike saturated fats, which are very present in dairy products and some meats, the unsaturated fats in nuts are beneficial to our body. The problem with commercial hazelnut creams such as Nutella or Nocilla is that they have a very high percentage of saturated fats that end up having harmful effects on our health.
The great advantage of making our homemade vegan Nutella is that we have total control over the ingredients we use. For example, in this recipe, we will change the sugar for agave syrup for two reasons. Firstly, because agave syrup has a fairly high sweetening power, so I can use a small amount and thus reduce the total carbohydrate in the recipe. On the other hand, being a liquid ingredient is impalpable to the touch, so I get that the cream is more unctuous and there is no risk of noticing the sugar when chewing.
VEGAN NUTELLA
Ingredients:
♡ 100 gr. of toasted hazelnuts
♡ 50 gr. of toasted almonds
♡ 60 ml. natural soy milk (or other vegetable milk)
♡ 15 gr. of cocoa
♡ 25 gr. agave syrup
Preparation:
Crush the nuts with a food processor for a little more than 5 minutes. You will see that first, they make flour and soon they begin to loosen the oil and to turn into butter. We have to crush until there are no lumps and the batter is homogeneous.
Add soy milk, agave syrup, and cocoa. Mix with the processor.
With the help of a spatula, finish mixing the cream until all the ingredients are well integrated.
NOTES
We store our hazelnut and cocoa cream in a hermetically sealed container and keep it in the fridge for a maximum of 5 days.

Thanks to their composition in folic acid and zinc, hazelnuts are indicated during pregnancy.
Benefits of cocoa
Diabetes helps to improve insulin resistance and glucose metabolism. Its pro-anthocyanins prevent cataracts and are effective in the prevention and cure of diabetes nephrotoxicity.
Blood pressure: its high flavonoid content makes it a good ally to regulate it; in turn stimulates the production of nitric oxide, which relaxes blood vessels.
Obesity: helps model lipid metabolism, reduces the synthesis of fatty acids and increases thermogenesis, the production of heat in adipose tissue.
Brain: its flavonoids play a neuroprotective role, improving memory functions and learning capacity. Epicatechin and catechin have been shown to have beneficial effects in the prevention of Alzheimer's disease.
