In this delivery of green food I bring you a delicious hamburger Vegana inspired in Japan, which we will accompany with a homemade vegan mayonnaise, for those who wonder what is Azuki because I tell you that are some vegetables from the Himalayas which are very rich and provide a large percentage of protein, as well as rich fiber for our body.
The Azuki will have them reserved since we will have to leave them soaking approximately 8 hours all this the night before. Optionally we can add a piece of kombu seaweed which will serve to soften and improve much more the digestion experience. We will keep them cooking for 1 hour and a half.
Azukis burguer, Japanese-style
My secrets INGREDIENTS
♡ 200 gr. of cooked azukis
♡ 100 gr. brown rice
♡ 50 gr. of dried shiitake mushrooms
♡ ½ onion
♡ 2 tablespoons thin oatmeal or whole wheat bread (optional)
♡ Crispy fried onion
♡ Salt
For Japanese vegan mayonnaise:
♡ 100 ml. natural soy milk without sugar
♡ 300 ml sunflower oil
♡ 1+1/2 tbsp. soy sauce
♡ 3 tbsp. rice vinegar
PREPARATION
Cooking time: 35min
Total: 65min
We boil the brown rice. In order for the rice to fit well, we must respect the ratio of one measure of rice to two measures of water. Put the rice on the fire with the water (without waiting for it to boil), add salt and cover. Cook over low heat until all the water is consumed.
Hydrate the mushrooms putting them to boil in water for about 5 minutes or until they are soft. Drain them and cut them into small pieces.
Heat a frying pan, add a little oil and sauté the onion and mushrooms.
In a bowl, mash the azukis and mix them with the rice and the sofrito. If the ingredients don't mix well, add a couple of tablespoons of fine oat flakes or little breadcrumbs. When the dough is ready, form 6 balls of approximately 150gr. and crush them with your hands, giving them the shape of a hamburger.
Pass the hamburgers through the frying pan with a little oil, over low heat until toasted on each side.
To prepare the Japanese vegan mayonnaise, beat the soy milk with the oil, which we will add little by little and constantly, at medium speed and always keeping the foot of the mixer fixed. When emulsifying, we will begin to move the foot of the mixer gently from top to bottom. Before we finish beating, add the soy sauce and rice vinegar.
NOTES
We serve the hamburgers accompanied by mayonnaise and crispy fried onion on top.

What is sunflower oil for?

In addition, it acts as an excellent moisturizer because it allows the dermis to retain moisture due to linoleic acid. This compound, in turn, promotes the formation of elastin and collagen that reduce the effects of the passage of time.
Helps regulate the nervous system
Those suffering from stress, anxiety or insomnia should increase their intake of Omega 6 essential fatty acids, as these improve the functioning of the nervous system. Sunflower oil contains it in a good dose, so it is recommended to use it to spice up meals.
This oil also has other positive effects related to the nervous system, for example, delays the onset of neurodegenerative diseases such as Alzheimer's and multiple sclerosis. In addition, it is advisable to eat sunflower seeds that provide Omega 6 fatty acids, magnesium, and vitamins that prevent the loss of memory.
