Chickpeas with spinach and paprika

This delicious Spanish dish is easy to prepare and so tasty! I cooked it in a clay cazuela but a medium skillet will work fine.

You need:

3 cups of cooked chickpeas
extra virgin olive oil
sweet paprika (or if you like a kick, smoked paprika)
salt
pepper
1 bunch of spinach finely chopped
9-12 cloves of garlic minced

In the cazuela or skillet, heat the extra virgin olive oil (about 4-5 tbsp) on low heat.
Add the minced garlic and saute until golden.
Add the spinach, a little at a time, and the paprika and stir to coat the spinach in the garlic and paprika.
When the spinach is wilted but still bright green, add the chickpeas, salt and pepper and stir to mix everything. At this point you can add a little water but I usually dont. You can also add a little more olive oil at this point if you want. Cover and simmer for 5 minutes more.

Serve and enjoy! This makes a great side dish or a vegetarian main dish with a green salad!

your dish is spicy but i would more spicy with addition lemon juice agree???

Its spicy with flavor but not heat. Just be sure to use sweet paprika and not hot paprika. Im not much of a fan of hot spicy foods. Im sure it would still taste delicious with a splash of lemon though!
