To make this turnip cake we need radish, shitake mushroom, dried shrimp and Chinese sausage or known as Lap Cheong. If you have trouble finding lap cheong, you can replace it with fresh pork.
Materials needed
- 300 grams of rice flour
- 1 kg of radish
- 800 ml of water (including radish juice)
- 3-4 medium size shitake mushrooms
- 1 teaspoon Spice 5 Flavor (can be replaced with pepper powder)
- 1 tablespoon dried shrimp that has been soaked
- 100 grams of Lap Cheong
- ¼ medium size onion
- 3 leeks
- ½ tablespoon salt
- ½ teaspoon sugar
Vegetable oil (as needed) - 1 tablespoon of cooked wine
How to make
- Soak dried shrimp in a small bowl until tender. Drain, then cut into a very small size. Cut shitake mushrooms to be the same size.
- Peel the skin of radish and grate radish. If you do not want the radish texture to taste in a turnip cake, then grate the radish as gently as possible.
- Move the radish into a large bowl, sprinkle with salt and flatten by hand. Let stand for 20-30 minutes until the grated turnips become soft.
- Prepare other ingredients: heat about ½ tablespoon of oil in pan, then saute onion, dried shrimp, dab cheong and shitake mushrooms until fragrant. Set aside.
- Squeeze the horseradish and the juice of the juice in a beaker to find the amount of radish juice. Move it into a large bowl to mix the dough. Mix whole flour with radish juice and add water deficit to total amount of radish juice + additional water of 800 ml. Add the turnip pulp and 5 Flavored Spices.
